Fundamentals of Fermentation: Traditional Sauerkrauts and Vegetables


In this hands-on workshop, will explore the science and culinary art of natural fermentation. Participants will learn how to easily make a probiotic-rich, traditional sauerkraut, and healthful & flavorful lacto-fermented carrots. No special equipment, or fussy procedures are required, and lots of tips and tricks will be shared to get you off to a successful start in the big wide world of fermentation.

Each student will make 1 pint of a traditional sauerkraut, and one pint of garlic “pickled” carrots. We will learn several variations on sauerkrauts - traditional, Bavarian-style, and a Carolina slaw with a sweet vinaigrette (a great introductory recipe for those new to fermented foods!) You can choose to make a traditional or Bavarian-style in class. Recipes will be provided.  We will end our workshop by gathering ‘round the table for a tasting and some good conversation.  

About Your Educator:

Kara Grupp, of Three Pines Farm, has been making her own naturally fermented foods, including sauerkraut, for over 10 years, and has learned from national fermentation experts, Sandor Katz and Tara Whitsitt. With a background in research, she has a fascination with the science behind the fermentation process, as well as the culinary creativity it offers, and truly enjoys sharing her knowledge of fermented foods with others.

Age Requirement: Recommended age of 16 years or older. 

Skill Requirement: All skill levels welcome.

Refund Policy: Cancellations occurring after October 9th, 2019 will be subject to forfeiture of registration costs. If you are unable to attend, you are welcome to send someone in your place. Full refunds on cancellations prior to October 9th are offered.


Please register by October 9th, 2019.  If the class minimum is not met, a refund may be issued in lieu of this class offering.  You will be alerted shortly after the registration deadline if a refund is being issued.  All materials and supplies will be provided in class.
